OPTIMIZATION OF HEAT PUMP ASSISTED INTERMITTENT DRYING
Heat pump assisted intermittent drying of salak fruit was performed in threestages: initial (heat pump drying), intermittent and final stages (hot air drying).Response surface methodology was used to derive the optimum drying parameters.Drying variables that were considered for the present study include intermittent duration ( X1), intermittent ratio ( X2) and intermittent cycle ( X3); while response variables were total drying time ( Y1), total heating time during intermittent ( Y2), total heating time after intermittent ( Y3), total color change ( Y4), ascorbic acid content ( Y5) and total phenolic content ( Y6).Experimental results showed that all the response variables were improved under the optimized drying condition.
