Antimicrobial Activities and Antimicrobial Characteristics Among Strains of Hericium erinaceus

In this paper, the antibacterial activities of seven strains of Hericium erinaceus were studied using different media, different culture methods, different test methods, and different culture times with the punch-hole method. Strains with the highest antibacterial activities were identifieded, and the stability of active substances and antibacterial ingredients were studied. The results showed that the antibacterial activity of strain H687 incubated in medium # 1 under static culturing for 13 d against Bacillus subtilis and Salmonella typhimurium was significantly better than those of the other strains, Furthermore, we showed that the active antibacterial substance from strain H687 had good thermal stability, strong antibacterial activity under acidic conditions. The substance was not a polysaccharide nor sensitive to protease treatment and it was effectively extracted using n-butanol.
