Towards a Better Understanding of the Present Production of Button Mushroom by Generating Data

The competitiveness of the Dutch mushroom industry relies on a cost effective and reproducible production system for button mushrooms (Agaricus bisporus). A better understanding of this production system, especially the substrate, is essential. A number of analyses have been done in the past on climate, substrate and the final product, i. e. mushrooms. This has led to an improvement of yield and quality. There is, nevertheless, insufficient understanding on what exactly determines yield and quality. This lack in knowledge prevents making a substantial step forward in improvement of the present production platform. Recently, a research project has started intended to generate data from the present production system in order to improve our understanding of the system, find out what are the limits and where are opportunities for essential improvement. The emphasis is on the substrate. The project has generated closed cycles for the main processes in the crop: nutrition (carbon, minerals) , water and energy. In addition, substrate degradation during the cropping cycle has been monitored and improved our understanding of substrate utilization.
