Advances in Solid State Fermentation of the Mushroom Fungus: Agaricus bisporus
Agaricus bisporus, within the context of the spawn and mushroom production industry, is grown on a hydrated solid matrix composed of organic and inorganic materials-a solid state fermentation (SSF) process. The purpose of this study is to showcase the development of new generations of A. bisporus grainless spawn products at Sylvan using bench-scale lab techniques that provide insight on performance at the pilot and customer levels. These techniques involve measuring the kinetic changes over time of SSF growth-related variables that occur in compost with the goal of determining which formulations provide faster spawn-runs.
