Study on Shelf Life of Ice-Temperature Beef of Small Package

The shelf life of fresh beef is only a few hours under normal temperature. Even in 0 - 4℃ conditions the period is no more than 7 days. In order to extend the shelf life of the raw beef, the small piece of fresh beef is for storage test in 0 - -5℃ temperature conditions. They were used common plastic small package. This paper studies on the sensory identification, determination of pH value and total volatile basic. The test results showed that the shelf period of fresh beef can be extended to 60 days.
