Scavenging free Radicals and Anti-liposome Peroxidation Activity of Black Rice Anthocyanin
Scavenging free radicals and anti-liposome peroxidation activity of black rice anthocyanin were studied and compared with Vc by using DPPH, H2O2/Fe2 +for hydroxyl, superoxide anion radical and Fe2+ for lipoprotein PUFA peroxidation systems. The results showed that scavenging activities of DPPH and hydroxyl free radicals were better, while scavenging activities of superoxide anion free radical and antiliposome peroxidation were weaker than that of Vc. In the tested concentration range, the maximal scavenging rate and inhibition rate of anthocyanin were 90.98%, 72.79%, 66.26% and 47.60%, respectively. Black rice anthocyanin as the natural pigment had the prospect of application in antioxidant.
