Study on the Antioxidant Activities of Jobs Tears Protein Peptide
Jobs tear has been known in Asia for thousands of years. In this research, Jobs tear was enzymolysised and its antioxidant activity was examined. The antioxidant activity can be determined by DPPH radical- scavenging method. The result indicated compared to drying method of 60℃, freezing drying and 30℃ drying methods could maintain the antioxidant activity of protein about Jobs tears better. The antioxidant activity of protein peptide about Jobs tears was the best, which was hydrolyzed by protamex. It was found that, with the increase in concentration of protein peptide about Jobs tears, its antioxidant activity was better;Compared to the water extract of Job tears, corn flour and rice flour, the antioxidant activity about protein peptide of Jobs tears was the best This study could make it possible for the further development of the peptide as natural antioxidant and protective foods.
