Forms of Selenium and Selenoproteins in Foods for Consumption by Humans

Introduction The relationship between selenium (Se) and health involves many aspects (Gromadzinska et al., 2008). Among them are the forms of Se present in the diet and in the body, and their functions and mechanisms of action. A wide variety of effects of different forms and doses of Se has been observed in a number of experimental systems, and it is presently difficult to pinpoint the mechanisms that may explain the positive effects of Se supplementation observed in some human long-term trials.
