Determination and Nutritional Evaluation of Amino Acids in Coprinus Atramentarius
In order to evaluate the nutritional quality of Coprinus atramentarius, its amino acid composition was determined and analyzed using an automatic amino acid analyzer. The amino acid composition of Coprinus atramentarius consists of 18 common amino acids, and includes 8 essential amino acids that are required in human body. The total content of amino acids in a dried Coprinus atramentarius sample was l9.46g/IOOg .The content of essential amino acids was 7.18g/100g.The ratio between essential amino acids and total amino acids was 36.9%. The essential amino acid composition basically met the requirements of the food standard issued by FA O/WHO. The coefficient of amino acids ratio was 64.49. higher than the coefficient of amino acids ratio of Coprinus comatus. The content of delicious amino acids was 7.13g/100g. Consequently, Coprinus atramentarius is a kind of edible mushroom which is full nutrition, delicious in taste and has much value in the exploitation and utilization.
