Effect of Chitosan on Clarification of Pomelo Juice
The study focused on the clarification technique condition of Guanxi honey pomelo juice. Through single factor and orthogonal experiments, the amount of different clarifying agents, times, temperature on effect of pomelo juice clarification were studied. Through clarification effect on pomelo juice by contrast, the optimum technological conditions were determined. The results showed that chitosan was the better clarifier and the optimum technological condition was as follows: 1.2g/mL of chitosan, temperature 35 °C and time I h. The final pomelo juice had a transmittance 93% after clarification.
