Preservation of Lentinulaedodes by Treatment of Ozonated Ice at Ordinary Temperature
To find a low-cost, simple and effective method of Lentinulaedodes preservation at ordinary temperature, the Lentinulaedodes were treated with common ice and ozonated ice after pretreatment, and the effect of the physiological and biochemical indexes were studied by different treatments. The results show that the best preservation effect could be achieved when Lentinulaedodes are treated by ozonated ice. Under this condition, the respiration rate and Vitamin C are much inhibited, and the increasing of polyenoloxidase (PPO) activity as well as titratable acid (TA) is delayed.
