Effects of Chitosan Coating on Quality of Ziziphus Jujube cv. Huizao during Storage

In order to evaluate the potential of chitosan coating in extending postharvest life and maintaining quality of jujube fruit during storage at low temperature, jujubes were coated by different concentration of chitosan. Compared to the un-coated jujube, the feasibility and effects of chitosan on the quality of jujube were examined. Changes of disease development, firmness , weight loss content of titratable acid, and polyphenol oxidase (PPO ) activity of jujube were regularly evaluated as guideline. The results showed that application of chitosan coating reduced the disease development and weight loss, inhabited the PPO activity, and was effective to maintain the firmness and ascorbic acid content of jujube. Jujube coated with chitosan could maintain better preserving characteristics than those uncoated. Chitosan coating of jujube could be considered for use during commercial storage and marketing.
