Effect of Ultraviolet-C Irradiation on the Storage of Agaricus bisporus
For searching the fresh-keeping technology of edible fungi to suit the production of scattered and smallscale, the effects of ultraviolet-C (UV-C) irradiation on the storage of Agaricus bisporus at 4 ℃ were studied. The results showed that the keepingfresh time of Agaricus bisporus was prolonged markedly after being treated with UV-C. The keepingfresh time extended from 9~10 days to 15~16 days at 4 ℃. UV-C irradiation can restrain the afterripening of Agaricus bisporus and depress the activity of polyphenol oxidase during storage, accordingly reducing its respiration rate, minishing plasmic permeability and delaying browning reaction, thereby prolonging its fresh-keeping time.
