The Antimicrobial Activity of Carvacrol and Linalool Against S. aureus for the Packaging of Cheddar Cheese

The effectiveness of starch-based films coated with carvacrol against S. aureus in vitro or on thesurface of Cheddar cheese was investigated. In solid media using the agar diffusion method, it was observedthat the inhibitory effect of carvacrol coated onto the films increased significantly with an increase in itsconcentration in the film. The results confirm that AM films containing carvacrol effectively inhibit thegrowth of S. aureus on the surface of Cheddar cheese.
