Study on structure and property of phosphate amphoteric starch

In this paper, the phosphate amphoteric cassava starch was synthesized using 3-chloro-2-hydroxypropyltrimethyl ammonium chloride (CTA) as the cationic reagent and phosphate mixture as the anionic reagent. The structure and property of the resultant starch was characterized by Fourier transform infrared spectroscopy (FTIR), X-ray diffraction (XRD), differential scanning calorimetry (DSC) and Brabender viscographer. The results showed that the crystal type of phosphate amphoteric starch was unchanged, but the degree of crystallinity was reduced compared with native starch. The reaction occurred not only in the amorphous region, but also in the crystalline region. With the increasing of modification degree, the gelatinization temperature of the starch paste decreased,the peak viscosity was higher than that of native starch, and the variation of heat stability and the gel property depended on the degree of cation substitution and anion substitution.
