Synthesis of Acetyl Vanillin Acetals Catalyzed by Solid Superacid

Acetyl vanillin is widely used as a spice, but it is low stability. Acetyl vanillin acetals can overcome the shortcoming of instability. First, the solid superacid SO42-/ZrO2 was prepared and characterized by FT-IR, SEM, EDS and XRD. Then the solid superacid was used to synthesize acetyl vanillin acetals. When acetyl vanillin is 0.05 mol, n(acetyl vanillin): n(diol)=1:2.4; the water-carrying agent is toluene (20 mL); the amounts of catalyst is 0.25% of the weight of acetyl vanillin; reaction time 1.0 h, the yield of acetyl vanillin glycol acetal is 96.4%. Under these conditions, the yields of acetyl vanillin propylene glycol acetal and acetyl vanillin 1,3-butanediol acetal are 94.1% and 97.2%, respectively. The structures of acetals were identified by FT-IR, GC-MS, 1H NMR and 13C NMR. The reaction time is short and the catalyst is efficient. The aroma of acetyl vanillin acetals was evaluated. The aroma of acetyl vanillin propylene glycol acetal is soft floral scent, and acetyl vanillin glycol acetal is floral and powdery scent. The acetyl vanillin 1,3-butanediol acetal is best among the three acetals with green and sweet floral scent. The acetals have development value for persistent aroma.
