Preliminary Study of Galloylating Modification of Procyanidin and Its Biological Activity
This research utilized Masson pine bark as raw materials and water as extracting agent for separation of proanthocyanidins, which contained procyanidin at 90.7 percent estimated by n-butyl alcohol/hydrochloric acid method. Through esterification, the galloyl radicals were inserted in procyanidin molecule structure, as the result of the galloylated modification procyanidin product was obtained. Through estimation of gallic acid quantity formed in the hydrolysate by HPLC method, the galloylation degree was calculated. After the research on biological activity difference between pre-galloylation and post-galloylation through the estimation of activity in radical-scavenging and complexation of transition metal ions, it was determined that the biological activity of procyanidin after modification was reinforced according to expectation.
