Temperature Distribution Analysis of Solid Food Model Heating in Microwave Oven

Finite element model of solid food in microwave oven was built to predict food temperature distribution during microwave heating by using commercial software FEMAP (Siemens Co. Ltd.), which is a kind of preprocessor. The temperature distribution of food was simulated, based on heat transfer equation including the internal heat generation owing to microwave heating. To obtain the internal heat generation, the distribution of microwave electric field in the oven was estimated by using PHOTO-Wavejω (Photon Co. Ltd.). Mashed potato with 1wt % sodium chloride was used as solid food for experimental validation. Water content of sample was 80% (g/g), and the input microwave power of 600W was used for heating. Results showed good agreement between the experimental data and predicted values of temperatures. We also examined the effect of existence of turntable and its rotation in the microwave oven. The simulation results showed that existence of the turntable makes a big difference in the temperature distribution.
