Applications of Bioinformatics in Food Quality Research

Bioinformatics is an interdisciplinary field involving biology, computer science, mathematics, and statistics to analyze biological sequence data, genome content and arrangement, and to predict the function and structure of macromolecules. It is a powerful tool for understanding biological phenomena and application to bioscience, bioengineering and medical fields. In the development of food quality research, bioinformatics also play an important role. This paper makes a brief review on the applications of bioinformatics in food quality research.
