MICROENCAPSULATION OF VITAMIN C BY INTERFACIAL/EMULSION REACTION:CHARACTERIZATION OF RELEASE PROPERTIES OF MICROCAPSULES
Chitosan microcapsules with a water-soluble vitamin C core were prepared by interfacial reaction via an inversed W/O micro-emulsion. The morphology of the microcapsules was characterized by field emission scanning electron microscopy, and the release of vitamin C was monitored by ultraviolet-visible spectroscopy. The release rate of vitamin C was dominated by the core content of vitamin C and the crosslinking density. All of the results indicate that the fabricated core-shell microcapsules with the water-soluble active ingredients were successful.
