STARCH STEARATE AS A NOVEL ENCAPSULATION WALL MATERIAL AND ITS EFFECT ON OIL-WATER INTERFACIAL TENSION
Starch stearate, a kind of new wall material used for encapsulation in the food and pharmaceutical industry, was synthesized by esterification of wheat starch with stearic acid by a dry method using hydrochloric acid as a catalyst. The results showed that the properties of starch stearate including emulsifying ability, encapsulation ability and decreasing interfacial tension ability in oil-water two phase systems, were increased with increase of DS, indicating that the modified starch can be a substitute for arabic gum used as emulsifier and encapsulation wall material.
