Research on Biomechanical Properties of Fruits and Vegetables Affected by High Pulsed Electric Field Using ResponseSurface Analysis
The study was undertaken to find out optimum conditions of pulse strength, pulse duration and pulse number for the maximum shear strength of apples when they were pretreated by high pulsed electrical field and to assess the effects of these factors by use of response surface analysis. The experiment was optimized using a Box-Behnken design. Statistical analysis of results showed that, the linear and quadric terms of these variables had significant effects, and the cross-product terms were not significant. According to the factor effect analysis, it was found that the most important physical factors of high pulsed electrical field which affected the shear strength were the pulse strength, pulse number and pulse duration. By response surface methodology and canonical analysis, the optimal parameters of high pulsed electrical field for the maximum shear strength were obtained as follows: pulse strength was 1750 V·cm-1, pulse duration was 150 μs and pulse number was 25, while shear strength was 163×10-3 MPa.
