β-Fructofuranosidase Production by Aspergillus Japonicus Z15
Aspergillus Japonicus Z15 produces very high p-Fructofuranosidase activity. For enzyme production by the strain, sucrose at 30% (w/v) was the best carbon source, yeast extract at 2.5 % (w/v) the best nitrogen source, K_2HPO_4 0.2 % (w/v) and NaCl 0.1 % (w/v). Total Transfructosylating activity and biomass were at maximum after fermentation 96 h, at 22.3mg/mL and 3.10U/mL, respectively. The optimum pH value of the fermentation was 6.0 and the optimum temperature 30 ℃.
