Comparative analysis of the physicochemical properties of some root and tuber starches
The proximate composition and some physicochemical properties of starches of two Nigerian (SP) sweetpotato varieties, Chinese (SP) sweet potato, Cassava and potato varieties were studied. The microscopy and granule size distribution of the starch samples were carried out using scanning electron microscope and particle size analyzer respectively. The proximate composition of the crops and their starches were determined using standard procedures. Solubility and swelling power were evaluated. The mean granule size of the crops varied between 11.07 and 20.51 Mm. The largest granule size was observed in the starchy potato variety while the lowest was observed in the golden brown Nigerian sweetpotato variety. Moisture,protein,ash and lipid content of the crops and starches were significantly different among the starches. The swelling power and solubility of all the starch samples ranged between (0.38-25.35%) and (2.43-62.72 ml/g) respectively. The variability observed in the indices measured shows their importance in some specific applications.
