The Suitability of Yuhongcheng Orange for Juice Processing
Yuhongcheng orange (Citrus sinensis Osbeck.), which has fewer seed, was selected from Xianfengcheng orange (C. sinensis Osbeck. ). It has many excellent characteristics such as big fruit, good interior quality, high and stable yield, fine adaptability and the maturity characteristics resemble to Hamlin sweet orange. It can be used for fresh consumption and processing. In this paper, the process ability of Yuhongcheng orange and Hamlin sweet orange were compared, in which juice yield, total soluble solid (TSS), the ratio of TSS to titratable acid(TA) , Vitamin C(Vc) , color, flavor and deficit were taken as key indexes. The results showed that the process ability of Yuhongcheng orange scored 94.6, while Hamlin sweet orange only scored 84.1.
