WATER,ENVIRONMENT AND FOOD SAFETY

Water is a fundamental factor in several aspects of food production.Access to Sufficient water for irrigation purposes in agriculture is a major issue,and the topic receives much attention.This presentation,however,will focus on the importance of water as link between discharge of environmental contaminants and subsequent uptake in,and contamination of food.This is also of widespread concern, but often receives less attention in water policy and management.In this presentation,I will give examples of three large scale concerns related to food safety and environmental contaminants,linked to the aquatic system in different ways.One example shows how the society in large regions of Europe and North-America are impacted by consumption advises for fish due to high mercury concentrations. Another illustrates how people living in the Arctic are especially concerned about environmental contaminants in their food,especially the food harvested from nature.The third example shows how arsenic.well known for drinking water contamination for a few decades,may become an important contaminant also from a food safety perspective.
