The Development of Risk Maps Using Statistical Models:Selenium Deficiency in Soils
Selenium (Se) is an essential human nutrient that is needed for proteins which have structural and enzymic roles.Important antioxidants and catalysts for the production of active thyroid hormone are formed from the latter.In Western Europe Se intake is mainly supplied by animal products and cereals (Sagar,2006).However,in countries where local products are the main source of food,low bioavailability of Se in the soil can lead to Se deficiency in agricultural products and the human diet.
