Regulatory and Legal Considerations for the Production and Sale Selenium-enriched Foods - the Ezample of the United States

Selenium (Se) is found in soil in a multitude of concentrations,ranging from almost devoid for some volcanic-derived soils,to relatively high in some soils derived from sedimentary rock,e.g. Areas of Central China (Zhang et al.,2008) and the Western USA. Although the relationship between soil-Se and concentrations of Se in plants is complex,overall areas with high concentrations of soil Se produce plants that contain Se concentrations well above average.For example in Table 1,the concentration of Se in food items grown on high-Se soils collected in areas of the USA known to have high soil Se are as much as 70-fold in excess of the average Se concentrations listed in the USDA database (Keck and Finley,2006).
