Determination of Selenium Speciation in Selenium-enriched Corn and Yeast by HPLC-UV-HG-AFS

Selenium (Se) toxicity and nutrition depends on its total amount and chemical speciation presented in foods.Generally,organic Se can be more easily absorbed by organisms including humans.Proteins containing Se and Se-met,Se-cys are the appropriate chemical forms for human daily intake from foods (Wang et al.,2000;Chen et al.,2007).Up to now,Se-enriched yeast is used widely in China as supplement in feedstuff and in food.In this study,corn flour collected from high Se area-Enshi and Se-enriched yeast were studied. The aim of this paper was to study their Se speciation in Se-enriched corn and yeast .
