Distribution of Molecular Weight of Selenoprotein Eztracted from Se-Enriched Brown Rice

Selenium (Se) is an essential micronutrient for human beings and animals.With the purpose of increasing peoples dietary Se,a wide variety of Se-enriched foods such as Se-enriched green tea (Hu et al.,2003),buckwheat and pumpkin (Stibilj et al.,2004) have been studied.Rice is one of the mostly consumed cereals throughout the world.However,Se content in rice is relatively low and a significant proportion of Se is lost during the milling process from brown rice to white rice (Liu et al.,2009).Consequently,rice could not meet the daily dietary requirement of Se.Some research has been completed on increasing Se content in rice grain by foliar spraying method (Fang et al.,2008;Hu et al.,2002). Our previous study provided an effective alternative to increasing Se level in brown rice by supplying sodium selenite during germination;a considerable amount of inorganic Se could be transformed into selenoproteins (Liu and Gu,2009).However,there is limited information on the properties of the selenoproteins. The objective of this study was to investigate the distribution of molecular weight (MW) of selenoprotein in Se-enriched brown rice.
