Difference in the workload of waiters serving with two types of plates

In order to keep staff healthy and able to work, management of the Royal Restaurant company in Helsinki decided to implement the Lightness in Work campaign. The most important cause of absence among the restaurants staff had been musculoskeletal diseases, which had increased during the past two years. During the campaign, waiters expressed their opinion of the plates causing musculoskeletal symptoms. The aim was to compare the workload caused by the handling of two plates of different weights and shapes through the use of workload measurements. The muscle workload was measured with electromyography (EMG). The participants perceived workload was recorded on a visual analogue scale (VAS). According to the participants, the heavier, which was black, black plate, was harder to handle. The muscle workload was higher in all of the muscles measured except the back muscles on the left side during serving with the black plate. We concluded that the form and weight of a plate should be taken into consideration when investments are made.
