The Influence of Vacuum Freeze-drying Technological Parameters on the Activity of Nattokinase
In order to decrease the loss of nattokinase activity and improve its efficiency during the freeze drying,, the experiment researches of nattokinase solution self-freezing by vacuum pumping were carried out by single factor experiment, and the effect of freeze drying process parameters on nattokinase activity and drying time were researched by orthogonal test. The results showed that the final temperature of nattokinase solution self-frozen by vacuum pumping were lower than its eutectic point when the loading thickness is in 3 ~ 15mm; when nattokinase solution loading thickness was 6mm, nattokinase solution was self-frozen by vacuum pumping, the shelf temperature was controlled at -5℃, and dry chamber pressure was 10 Pa. the nattokinase activity was the highest 152.5U (10mg/ml) .
