A Simulation Model Assessing the Impact of Using Time Temperature Integrators on Inventory Management

The shelf life of a fresh product is a function of the characteristics of the product and the conditions under which it is maintained. The use of Time-Temperature Indicators (TTIs) enables to monitor the real freshness of products during their life cycles within the cold chain. Several applications have already been observed in the industry. Other applications consist in checking whether products are maintained in the specified temperatures and to deploy corrective actions before any serious damage occurs. In this paper, we first investigate the main benefits that are expected from the use of TTIs in fresh products’ supply chains. Then, we focus on the benefits on inventory management. In order to assess quantitatively these benefits, we consider a single-stage, single-item inventory system where products have limited shelf lives. We develop a simulation investigation that compares the performance of the inventory system when using three different TTI technologies. The simulation results demonstrate the benefits arising from using these technologies and allow insights to be gained on other pertinent issues.
