Inner Surface Coating of Corrugated Boxes for Improving Fruit Freshness

In this paper,a novel method of applying a coating layer on the inner surface of corrugated boxes was used to preserve fruit freshness. The coating layer absorbs ethylene emitted from the fruits, and thus helping to keep the fruits fresh. The experiments were conducted with apples, since apples are known to generate more ethylene and at a faster rate than other fruits.Potassium permanganate was identified as an effective agent for absorbing ethylene, and it was therefore used in the coating formula, together with sodium benzoate as the bacteriostatic agent, and oxidized starch as the binder. The optimized coating conditions were: 6.7g/m2 potassium permanganate and 1.3g/m2 sodium benzoate and pH 4.Results of the experiments with apples show that the coating layer reduced significantly the loss of hardness and total acid contents of apples upon storage. Results also show that the coating layer maintained the freshness by slowing down the respiratory rate, the time to reach the respiratory peak and the respiratory intensity of apples during storage.
