Study on Retrogradation of Ultra-High Pressure Modified Starch
Corn starch-water suspension(5%, w/v) was subjected to ultra-high pressure(UHP) treatment at 500MPa、550MPa、600MPa、650MPa for 5min, and then the samples were dried for 0d、3d、5d、10days respectively. X-ray diffraction was used to determining crystallinity. X-ray diffraction patterns show that the crystallinity of UHP-treated starches after annealing at low temperature increases to a certain extent. After 3days storage, a maximum retrogradation extent appeared in the UHP-treated starches at 500MPa while no changes were observed in crystalline type. Similar results also happened to the UHP-treated starches at 550MPa, but the result of retrogradation for a longer time could cause the variation in crystalline type. The UHP-starches at 600 and 650MPa were stored for a period of time,crystallinity increased and crystal type changed from A to B.
