Plant genotype and Zn fertilization effects on nutritional quality of wheat grain: Implications for human health

Screening wheat genotypes for their nutritional quality is a prerequisite step for biofortification programs. This study was carried out to evaluate the concentrations of minerals and phytic acid in the shoot and grains of several wheat genotypes in response to Zn fertilization. A field experiment was conducted in a severely Zn-deficient soil (Typic Calcigypsids) in central Iran. Sixty five commercial bread wheat genotypes (Triticum aestivum L.) were planted in plots with (40kg(Zn)·ha-1 as ZnSO<,4>) and without added Zn. Concentrations of Zn, Cd and Fe were separately determined in the grain and shoot of genotypes. In addition, phytic acid content of whole grain and bran-free flour of selected genotypes was measured. Both in the presence and absence of added Zn, wheat genotypes were different in their ability to accumulate Zn, Fe, and Cd in their grains. The molar ratio of phytic acid to Zn in whole grain and bran-free flour was greatly different among studied genotypes. Some genotypes were more efficient in extracting Zn and Fe from Zn-deficient soil while others accumulated very low levels of Fe and Zn in their grains. Application of Zn-fertilizer increased concentrations of Zn in the shoot and grain of some genotypes while it had no effect or even significantly decreased Zn concentrations in others. Addition of Zn had also different effects on Fe concentrations in grain and shoot of genotypes. The results showed that under studied conditions, nutritional quality of wheat grains for human health depends on both plant genotype and Zn- fertilization.
