The risk posed by arsenic in rice to humans

Extensive market place & field survey of rice has shown that for many regions of the world that arsenic (As) reaches high levels in grain (1-2). Such regions include the cotton belt zone of the US, mining impacted paddies of China, and the As groundwater irrigated paddies of India/Eangladesh. Baseline values of As in rice grain range from~0.05-0.15μg/g, while for arsenic impacted soils this values is>0.3μg/g. The risk posed by the As in this rice depends on speciation & bioavailabilty. This is explored & it is concluded that inorganic (in.) As exposure from rice grain is unacceptable in the diet of>50 million people if current international levels of what constitutes a safe exposure level to inorg. As are robust. Strategies for reducing exposure are discussed.
