Application of Pulsed Electric Fields on Food Processing : the Power and Experiments on Microorganisms
Pulsed electric fields (PEF) technology applied to liquid food sterilization is a promising nonthermal method. On the basis of pre-work, a continuous PEF treatment system has been designed by ourselves in laboratory, with the pulse voltage of 15kV and the current of 40A. The application on microorganismsim ,including Aspergillus Niger , Salmonella , Yeast and Escherichia coli was investigated using static treatment chambers and continuous treatment chambers, respectively. Its effects on the inhibitions of microorganisms are discussed as well.
