In Vitro Assessment of Protein Quality in infant Formula Powder

We evaluated the quality of protein in infant formula powder in the market by Protein Digestibility Corrected Amino Acid Score (PDCAAS) in this article, in which the digestibility of protein was determined in vitro, the essential amino acids was determined by direct amino acid analysis and the tryptophan was determined by fluorometric method. The result of PDCAAS is between 0.82 and 0.91, can meet the growth requirement of the infant. This method can be used for evaluating the protein quality of the infant food.
