Effects of Rare Earth on Accumulation of Selenium in Soybean Sprouts
The selenium-enriched soybean sprouts were prepared by adding selenium and rare earth La<3+> into the cultivation solutions. The effect of rare earth La<3 +> on the accumulation of selenium in soybean sprouts was studied. When the concentration of La<3+> was below 6μg·ml<-1>, the contents of total selenium and organic selenium were both raised gradually, but decreased when the concentration of La<3+> was above 7μg·ml<-1>, the same trend occured also in the protein components extracted from selenium-enriched soybean sprouts. The highest selenium content 65.68μg· g<-1>, organic selenium content 53.58μg·g<-1> and selenium content of protein 31.57μg·g<-1> were all observed at La<3+> concentration of 6μg·ml<-1>. It was indicated that La<3+> could promote the uptake of selenium in the soybean sprouts at low concentrations. The contents of amino acids in protein were also increased when the concentrations of La<3+> was 6μg· ml<-1>, especially the contents of glutamic acid and aspartic acid were increased by 4% and 3% respectively.
