A NEW CONCEPT TO DETERMINE THE OPTIMAL CONDITION FOR COLD TRANSPORTATION CONSIDERING ENVIRONMENTAL LOAD
Cold chain is indispensable to distribute perishable food materials such as raw fish. However, it is closely connected with environmental load, though it is rarely focused until now. It is worthwhile to propose a new concept to determine the optimal condition of cold transportation that attains not only high food quality but also low environmental load. Since the cold transportation process comprises of two functions, i.e., to make vehicles run and to keep low temperature, the environmental load is also separated to two kinds. By employing extended TTT concept, the two kinds of environmental load are found to have a trade-off relation, which indicates the optimal transport velocity will be determined for provided transport distance and acceptable food quality deterioration. Through a model calculation based on statistical data in Japan and the latest research data about fish freshness, the proposed concept will be confirmed to be reasonable.
