Effect of the Molecular Weight on Physiological Function of Sericin Protein
Various molecular weight sericin were prepared by hydrolysis, and compared with the physiological function such as a moisture-retaining property and an antioxidative property. Dehygroscopicity of the high molecular weight (high-Mw) sericin take longer to equilibrium of the moisture regain. This result suggested the high-Mw sericin has high moisture-retaining property than that of the low-Mw sericin. However, there was no effect of the molecular weight for antioxidative property by the (3-carotene-bleaching method.
