摘要：

Nature triacylglycerols(TAGs) are the main constituents(95-98 ％) of plant oils and animal fats which was an important part of the human diet,as they supply energy and many essential fatty acids(Fas) such as linoleic and linolenic acids,and fat-soluble vitamins such as vitamins(A,D,E,and K).Artificial TAGs are used as industrial materials as food additives or pharmaceutical accessories.Both nature and artificial TAGs are very complex in compositions,these makes the profiling of TAGs quite difficult.
