Separation of fourteen heterocyclic aromatic amines using high performance liquid chromatography-tandem mass spectrometry
Heterocyclic aromatic amines are formed during heating of various proteinaceous foodstuffs such as beef,fish and pork.It”s one typical class of food-derived contaminants.In this work,a LC-MS/MS method for separation of fourteen heterocyclic aromatic amines was established.The LC-MS/MS analysis was performed using a Shimadzu LC-30AD system coupled with AB SCIEX Q-TRAP 6500 mass spectrometer.
