Introduction Consumer preferences are the d riving force for dairy products that are demanded in the market.Dairy producers must be aware of consumer preferences if they are to remain profitable.This may require dairy producers to change their production and management practices to produce goods that consumers demand-for example from convention to organic production Dairy processors must also be aware of consumer preferences,be innovate in product development and relate this information to dairy producers.
