Demonstration of the Use of Tannin During Fermentation to Inhibit the Laccase Activity of Botrytis Cinerea
One of the decisive criteria in grape quality at harvest time is grape sanitary aspect.Gray rot caused by Botrytis cinerea is frequently responsible for deteriorating grape quality, as observed in many regions during the 2002 vintage.Grapes affected by this fungus contain laccase, a paradiphenol oxygen oxydoreductase (Dubernet,1974), capable of oxidizing many compounds in grapes, particularly aromatic substances (Boidron, 1978) and polyphenols (Salgues et al., 1986).When the grapes are highly botrytized, musts and wines may be badly spoiled,in spite of any precautions taken: sulfuring at proper doses, working in a totally reducing atmosphere, immediate addition of yeast, early racking, etc.
