The Research of Food Texture Detection System Which Can Achieve the Prediction of Sensory Evaluation

  The thesis using Visual C ++ and Access software developed a new system software which can make the function of food texture detection.Compared to the traditional food texture detection system,the system enables to accomplish the detection of food texture,such as Hardness,viscosity,elasticity,chewiness.Furthermore,mathematical model of chewing movements has been built on the basis of human mastication,based on the mathematical model of chewing movements,the program which can control the hardware movement was redesigned,this is important to improve the accuracy of the test data,meanwhile,a window was built by which some motion parameters in the program are modifiable.This system also increased the function of regression analysis,it can use the data between food texture data and sensory evaluation data to establish the regression equation,research on the regression equation is helpful to look into how the sensory evaluation data are affected by the food texture data,the construction of the regression analysis comes true the efficiently predict function of the system.Such function can be used to guide the operation on the new product development.
