Changes of Total Volatile Basic Nitrogen(T-VBN)and biogenic amines in different tissues of death Chinese mitten crab Eriocheir sinensis in 24h

摘要：

　　TVB-N and biogenic amines of death Eriocheir sinensis muscles, hepatopancreas, testis and ovaries (four edible parts) were examined at storage 20℃during 24h.Nine biogenic amines contents were determined by using high performance liquid chromatographic method.The test groups were selected respectively after storage 0h, 3h, 6h, 9h, 12h, 15h, 18h, 21h, 24h.
