Effect of electron beam irradiation on quality,sensory,and bacterial populations in Bullacta exarata

  Bacterial populations and sensory,and nutritional quality of raw and electron beam-irradiated (doses:0,2,5,8,10,15)Bullacta exarata were studied.Irradiation experiments were conducted using 10Mev(10Kw)linear accelerator with single beam fixture.Bullacta exarata were stored at 30℃ for 10days and tested at days 0,5,10.Electron beam irradiation of Bullacta exarata resulted in significant dose-dependent elevation of total bacteria and coliform bacteria.However,Irradiation of Bacterial populations revealed a significant(p<0.05)decrease in crude lipid,moisture content and crude protein which was significant at the dose do 2KGy,5KGy,5KGy,respectively.Only irradiation up 15KGy affected (p<0.05)the tenderness of Bullacta exarata as the samples became considerably softer.While irradiation at dose higher than 2KGy did affect the color of Bullacta exarata.TBARS values of EB-irradiated Bultacta exarata up to 2KGy were not different(p≥0.05)than those of unirradiated samples,but TBARS values of the samples which exposed to irradiation dose more than 5KGy were significant higher than those of unirradiated samples.Electron beam irradiation of Bullacta exarata up to 5KGy is feasible decontamination treatment that maintain the overall sample quality attributes.
